Nice--I'm an adopted Gopher b/c of my graduate studies.
This is just the type of team BYU needs to play--they are generally decent enough to be a respectable win, but not good enough that BYU wouldn't be facing at least even odds playing them. The more important thing is it allows BYU to build their presence in Big Ten country, where BYU has traditionally had very little presence.
The Gophers have a fairly new, cozy stadium that offers great views of the football field and of downtown. The student section is a little annoying, but they've been through a lot of mediocrity--generally the Gophers are good enough to be competitive in most games, but not good enough to break the cycle of being +/-2 wins around .500. They also find ways to snatch defeat from the jaws of victory.
And as long as the game isn't in November, the weather should be good enough, and there's plenty of things to do in the Twin Cities to make a long weekend out of it. When the time comes, hit me up and I'll provide my input on things to see/do in Minnesota.

2020 is stacking up to be an exciting season! It COULD be another VERY tough season, the SOS has a good chance to be high: USU and Minnesota are perennially the weakest teams on that schedule, and they aren't bad. Wow! Independence has its perks I suppose

I actually prefer the independent schedules to what the Big 12 would provide. Of course, I'd still take Big 12 membership to be part of the club and to get the TV payout. But, pretty good slates coming up. All good P5 programs; Minnesota and Virginia are probably the weakest P5 programs on the list:
2017 - 4 P5 plus Utah St., Boise St., and Hawaii
2018 - 5 P5 plus Utah St., Boise St., and Hawaii (2 games to schedule)
2019 - 4 P5 plus Utah St. and Boise St. (4 games to schedule)
2020 - 6 P5 plus Utah St. and Boise St. (3 games to schedule)
2021 - 6 P5 plus Boise St. (5 games to schedule)
2022 - 4 P5 plus Boise St. (6 games to schedule)
2023 - 3 P5 plus Boise St. (8 games to schedule)
2024 - TBD (12 games to schedule?)
2025 - 3 P5 (9 games to schedule)

Why do people always say that just because the game is so far out? Teams do schedule that far ahead.
