Jeff Campbell (hoops) falls into the category of came Gentile, left Mormon.

One of the Tuipulotus (Peter IIRC) was baptized at the same ceremony as Detmer.

Jamal Willis

Jim McMahon used to feed the missionaries while in Philly (and that's about as close as he ever got!)

Tim Nowatzke converted when he came to BYU (after Notre Dame told him he was too small to play D1 ball). He spent a summer or 2 as an EFY Counselor.

Jason Chaffetz came as a non member and a Democrat and is now neither.
